Ingredients:
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 cup brown rice
- 2 cups vegetable broth
- 1/2 cup frozen peas
- 1/4 cup raisins
- Salt and pepper, to taste
Instructions:
- Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

- Add the vegetable broth and bring to a boil.

Wild Rice Pilaf
Ingredients:
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 1/2 cups wild rice, rinsed and drained
- 3 cups chicken or vegetable broth
- 1/2 cup sliced almonds
- 1/2 cup dried cranberries
- 2 tablespoons chopped fresh parsley
- Salt and pepper, to taste
Instructions:
- Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the wild rice and cook, stirring, for 1-2 minutes.
- Add the broth and bring to a boil.
- Reduce the heat to low, cover, and simmer for 45-50 minutes, or until the rice is tender and the liquid has been absorbed.
- Stir in the almonds, cranberries, and parsley and season with salt and pepper to taste. Serve hot.
