I found a recipe that is sure to tickle your taste buds on Closet Cooking, and I just had to share it with you all.
Creamy Mushroom Chicken and Wild Rice Soup
Let's start by gathering our ingredients:
- 1 tablespoon oil
- 1 onion, diced
- 2 cloves garlic, chopped
- 1 teaspoon thyme, chopped
- 8 ounces mushrooms, sliced
- 4 cups chicken broth
- 1 cup wild rice, rinsed
- 1 pound chicken, cooked and shredded
- 1 cup heavy cream
- 2 tablespoons parsley, chopped
- salt and pepper to taste
Instructions:
- Heat the oil in a large saucepan over medium-high heat, add the onions and saute until tender, about 5-7 minutes.
- Add the garlic and thyme and saute until fragrant, about 1 minute.
- Add the mushrooms and saute until they release their moisture, about 10-15 minutes.
- Add the broth, wild rice, chicken, salt and pepper, bring to a boil, reduce the heat and simmer until the rice is tender, about 45 minutes.

- Add the wild rice to the pot and simmer for an additional 35-40 minutes or until the rice is cooked.
- Stir the cooked chicken and heavy cream into the pot and simmer for another 10-15 minutes until heated through.
- Season with salt and pepper to taste and serve, garnished with fresh parsley leaves.
