I just found some amazing new recipes that I had to share with y’all. These dishes are perfect for us folks who are tryin’ to eat a little healthier, but still want some deliciousness in our lives. Check out these two yummy chicken dishes that are packed full of flavor and are perfect for any meal!
Spinach-Stuffed Chicken:
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 cups spinach leaves
- 1 clove garlic, minced
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. paprika
- 1 tsp. olive oil
Instructions:
- Preheat oven to 375°F.
- Cut a pocket into each chicken breast.
- In a small bowl, mix together spinach, garlic, salt, pepper, paprika, and olive oil.
- Stuff each chicken breast with spinach mixture.
- Bake for 25-30 minutes, or until chicken is cooked through.
Chicken with Spinach in Creamy Parmesan Sauce:
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 handfuls spinach leaves, chopped
- 1/2 cup heavy cream
- 1/3 cup grated Parmesan cheese
- 1 tsp. olive oil
- 2 cloves garlic, minced
- 1 tsp. salt
- 1 tsp. black pepper
Instructions:
- Preheat oven to 375°F.
- Heat olive oil in a large pan over medium-high heat. Add garlic and cook until fragrant.
- Add chicken breasts to the pan and cook until browned on both sides. Remove from pan and set aside.
- Add spinach to pan and cook until wilted.
- Add heavy cream, Parmesan cheese, salt, and black pepper to the pan and stir to combine.
- Return chicken to the pan and spoon sauce over the top of the chicken breasts.
- Bake for 25-30 minutes, or until chicken is cooked through.
