Now let's get into the nitty-gritty. Here's what you'll need for the marinade:- 1/4 cup soy sauce
- 1/4 cup mirin
- 2 tablespoons sake
- 1 tablespoon sugar
- 1 garlic clove, minced
- 1 teaspoon grated ginger
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 8-10 wooden skewers, soaked in water for at least 30 minutes
- Combine all the marinade ingredients in a bowl and mix well.
- Add the chicken to the marinade and let it marinate for at least 30 minutes, or up to overnight in the fridge.
- Thread the chicken pieces onto the skewers, then grill them over medium-high heat for about 5-7 minutes on each side, or until cooked through.

- 1/4 cup sake
- 2 tablespoons mirin
- 2 tablespoons sugar
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- 1/2 cup dashi
- 1/4 cup mirin
- 1/4 cup soy sauce
- 1 tablespoon sugar
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 8-10 wooden skewers, soaked in water for at least 30 minutes
- Combine all the marinade ingredients in a bowl and mix well.
- Add the chicken to the marinade and let it marinate for at least 2 hours, or up to overnight in the fridge.
- Thread the chicken pieces onto the skewers, then grill them over medium-high heat for about 5-7 minutes on each side, or until cooked through.
