Chicken and Wild Rice Soup

Ingredients:

• 1 lb. boneless, skinless chicken thighs, trimmed
• 1 cup wild rice
• 1 cup diced yellow onion
• 1 cup diced celery
• 1 cup diced carrots
• 4 cloves garlic, minced
• 8 cups chicken broth
• 1 tsp. dried thyme
• 1 tsp. dried rosemary
• 1 tsp. salt
• 1/2 tsp. black pepper
• 1/2 cup heavy cream
• Chopped fresh parsley, for garnish

Instructions:

1. Add the chicken, wild rice, onion, celery, carrots, garlic, chicken broth, thyme, rosemary, salt, and black pepper to your instant pot or slow cooker.
2. If using an instant pot, set it to high pressure for 30 minutes. If using a slow cooker, cook on low for 6 hours or high for 4 hours.
3. Once the cooking time is up, release the pressure on the instant pot or remove the lid from the slow cooker. Remove the chicken thighs from the pot and use two forks to shred it.
4. Add the shredded chicken back to the pot and stir in the heavy cream.
5. Garnish with chopped parsley and serve that good good.

• 1/2 tsp. dried thyme
• 1/2 tsp. celery seed
• 1/4 tsp. red pepper flakes
• 1 cup milk (anything but skim)
• 2 Tbsp. all-purpose flour
• Salt and black pepper, to taste

Instructions:

1. Add the chicken, wild rice, brown rice, onion, celery, carrots, chicken broth, garlic powder, onion powder, thyme, celery seed, and red pepper flakes to a slow cooker.
2. Cook on high for 4 hours or low for 6-8 hours.
3. Remove the chicken from the slow cooker and shred it. Add it back to the slow cooker.
4. In a separate bowl, whisk the flour and milk together until smooth. Add it to the slow cooker and stir to combine.
5. Cook for an additional 30 minutes to an hour until the soup thickens.
6. Season with salt and black pepper to taste.
