Today's freezer meal recipe is a delicious Chicken and Wild Rice Casserole. This dish is perfect for busy weeknights when you want something hearty and flavorful, but don't have a lot of time to spend in the kitchen.

Chicken and Wild Rice Casserole

Ingredients:

• 1 cup uncooked wild rice
• 1 lb. boneless skinless chicken breasts, cubed
• 1 can cream of mushroom soup
• 1 cup chicken broth
• 1/2 cup diced onion
• 1/2 cup diced celery
• 1/2 cup diced carrot
• 1 tsp. garlic powder
• 1 tsp. dried thyme
• 1/2 tsp. salt
• 1/4 tsp. black pepper
• 1/2 cup shredded cheddar cheese
• 1/4 cup chopped fresh parsley

Instructions:

1. Preheat oven to 375°F.
2. Cook wild rice according to package instructions.
3. In a large bowl, mix together chicken, cream of mushroom soup, chicken broth, onion, celery, carrot, garlic powder, dried thyme, salt, and black pepper.
4. Stir in cooked rice, cheese, and parsley.
5. Pour mixture into a 9x13 inch baking dish.
6. Cover with foil and bake for 30 minutes.
