Jumbo Chicken Breast Bites
This package of chicken bites from Costco's Erie Meats is a true winner in my book. They're jumbo, juicy, and flavorful – perfect for tossing into salads, wraps, or stir-fries. Check out the mouth-watering recipe below for how I like to cook them up.
Ingredients:
- 1 package of Costco's jumbo chicken breast bites
- 1 bell pepper
- 1 onion
- 2 cloves of garlic
- 2 tablespoons of olive oil
- 1 teaspoon of chili powder
- 1/2 teaspoon of paprika
- Salt and pepper to taste
Instructions:
- Preheat your oven to 350 degrees Fahrenheit.
- Slice the bell pepper and onion into thin strips and mince the garlic.
- In a bowl, mix together the chicken bites, bell pepper, onion, garlic, olive oil, chili powder, paprika, salt, and pepper.

- 1/4 cup of red onion, diced
- 1/4 cup of dried cranberries
- 1 tablespoon of honey
- 1 teaspoon of Dijon mustard
- Salt and pepper to taste
- Optional: whole wheat pita pockets or bread for serving
Instructions:
- Drain the canned chicken breast and shred it with two forks.
- In a bowl, mix together the shredded chicken, Greek yogurt, celery, red onion, dried cranberries, honey, Dijon mustard, salt, and pepper.
- Serve the chicken salad in a whole wheat pita pocket or between two slices of bread.
