Ingredients:
- 8 oz. pasta (linguine, fettuccine or spaghetti)
- 1 lb. boneless chicken thighs, cut into small pieces
- 2 tbsp. olive oil
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 yellow onion, chopped
- 1 tsp. Cajun seasoning
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup Parmesan cheese, grated
- Salt and pepper to taste
Instructions:
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil and saute garlic until fragrant. Add chicken and cook until browned on both sides for about 5 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add onion and red bell pepper and cook until tender.
