Black Beans and Rice Tostadas

Ingredients
- 1 can of black beans, drained
- 1 cup of white rice
- 1 cup of water
- 1 packet of Zatarain's Black Beans & Rice Rice Dinner Mix
- Tostada shells
- Shredded cheese
- Sour cream
- Salsa
- Cilantro
Instructions
- Cook the rice according to the packet directions.
- In a separate pot, cook the packet of Zatarain's Black Beans & Rice Rice Dinner Mix with 1 cup of water.
- Once both the rice and beans are cooked, mix them together in a large bowl.
- Place the tostada shells onto a baking sheet and sprinkle shredded cheese on top.
- Bake the tostada shells in the oven at 375°F for about 5-7 minutes or until the cheese is melted and the shells are crispy.
- Once the tostada shells are done, remove them from the oven and layer them with the black bean and rice mixture.
- Top the tostadas with a dollop of sour cream, a spoonful of salsa, and some cilantro leaves.
