Listen y'all, I tried the chicken pot pie from Costco and let me tell you, it was finger lickin' good! The crust was buttery and flaky, and the filling was hearty and delicious.
Ingredients:
- 2 cups cooked chicken, shredded
- 1 cup frozen mixed vegetables
- 1/3 cup butter
- 1/3 cup chopped onion
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 3/4 cups chicken broth
- 2/3 cup milk
- 1 teaspoon dried thyme
For the crust, you can either use store-bought pie crust or make your own with this recipe:
Ingredients for crust:
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 cup unsalted butter, cold and cut into small pieces
- 1/4-1/2 cup ice water
Instructions:
- Preheat oven to 425 degrees F (220 degrees C).
- In a saucepan, combine chicken, vegetables, and enough water to cover. Bring to a boil, and cook for 15 minutes. Remove from heat, drain, and set aside.
- In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, and pepper. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
- In a mixing bowl, combine flour, salt, and sugar. Cut in butter until mixture resembles coarse crumbs. Stir in water a tablespoon at a time until mixture forms a ball. Divide in half, and press each half into a 9 inch pie pan.
- In one of the pie crusts, add the chicken and vegetable mixture. Pour the thickened sauce over the top of the chicken mixture.
- Top the chicken mixture with the second pie crust, sealing the edges and piercing the top crust with a fork to let steam escape.
- Bake in the preheated oven for 30 minutes, or until crust is golden-brown.
As the saying goes, "if it ain't broke, don't fix it". This chicken pot pie recipe from Costco is definitely a winner in my book. Give it a try and let me know what you think!
